Layered Banana Split

















what you need: 

2 cups graham cracker crumbs
1/2 cup butter, melted
8 ounces cream cheese, at room temperature
1/2 teaspoon vanilla
1/4 cup granulated sugar
2 Tablespoons + 3 1/2 cups cold milk, divided
16 ounces Cool Whip topping, divided
1 (23-ounce) container of frozen sliced strawberries, thawed and drained well
1 (20-ounce) can crushed pineapple, drained well
2 (3.4 ounce) boxes of banana cream pudding instant pudding
Chocolate syrup
Maraschino cherries (optional, but encouraged!)
Nuts (optional)

Peach Dumplings






















Ingredients:
2 whole large peaches ( you can use canned peaches as well if you don't have fresh)
2 8 oz cans crescent rolls
2 sticks butter
1-1/2 cup sugar
1 tsp vanilla
cinnamon, to taste
1 1/2 cups orange juice

Peel and pit peaches. Cut both peaches into 8 slices. Roll each peach slice in a crescent roll. Place in a 9 x 13 buttered pan.
Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour entire mixture over peaches. Pour orange juice around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.

Mexican Dip
























Ingredients:
2 8oz cream cheese boxes
2 big spoonfuls sour cream.
2 pkgs of taco seasoning
shredded lettuce
chopped black olives
chopped green pepper
chopped tomatoes
4 cups shredded Mexican Cheese


Instructions:
Beat cream cheese and sour cream together til smooth, add taco seasoning. Spread on large glass dish…top with lettuce, Green onion (if you like onion) Tomatoes and black olives sliced. Top with cheddar cheese…use any corn chips you desire. Best part of this is you can add more or less toppings to the base depending on tastes and kids love it too. I recommend using disposable 9×13 aluminum pan if taking this dish to a party or picnic. It can be split into 2 round cake pans if you have picky eaters too!

KFC Original Recipe Chicken
























1 whole chicken, cut into pieces…
3 beaten eggs
4 tablespoons oil

For the coating

2 cups flour
4 teaspoons paprika
2 1/2 teaspoons salt
1 teaspoon pepper
1 teaspoon poultry seasoning
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon tarragon
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1/2 teaspoon celery salt
*optional add ketchup to mix


Directions:

1. Sift together all the coating ingredients and place in a clean plastic bag. Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.

2. Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered. Once
browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess oil.

Tea-time Butter Cake






















Ingredients:

3 eggs
150gms butter ( I prefer salted butter)
1 cup powdered sugar
1 1/2 cup flour
1 1/2 level tsps baking podwer
1/8 tsp baking soda (optional)
1/4 tsp vanilla essence
1/2 cup milk
1/4 tsp salt

Instructions:

Pre-heat 9"  greased baking tray at 350F/180C
seive flour + baking powder + baking soda+ salt
Beat the butter well
Add sugar and beat again
Add eggs 1 at a time and mix well
fold in the flour mix to the egg batter alternating with milk
add vanilla essence
set the mix into the tray and bake it for 20-25 mins or till the cake is done
cool it on a rack 
sprinkle some sugar+cinnamon dust or just sugar dust (optional)
Its one of my mom's favorite tea-time cakes!!

Coconut Topped / Cream Cheese Sheet Cake



























Ingredients

1 c butter, softened (2 sticks) 
6 oz cream cheese, softened 
6 eggs 
2 1/4 c sugar 
1 - 2 tsp vanilla extract or for more of a coconut flavor, add coconut extract 
2 1/4 c cake flour 
1/8 c coconut milk or coconut cream - optional 
FROSTING - I DOUBLE THIS
1/4 c butter,softened 
4 oz cream cheese, softened 
1/2 tsp vanilla or coconut extract is good as well 
1 1/2 c confectioners' sugar 
1/2 c coconut- for toasting and sprinkling on top of the frosting 
Note:
can add a few tablespoons milk, cream or coconut milk ( i don't , as i like a thick frosting on the cake ) 

Directions

Preheat oven to 350 degree F.
Prepare a 9 x 13 pan with non stick cooking spray.
Cream together butter, cream cheese and sugar.
Beat in eggs one at a time, vanilla and then mix in flour. Add milk now if using. Beat in well.
Spread batter into prepared pan.
Bake 35 to 40 minutes or until wooden pick comes out clean.
As this cake cools, it will fall...that's normal...so don't be alarmed...it should be the thickness of a sheet cake...it will not be thick like a regular cake...:)
Cool on cooling rack.
Note: some have said that this cake becomes even moister if placed in freezer as soon as comes from the oven. I've not tried it, but have also read that this is true with cakes in general.
Frosting:
Beat together butter, cheese, vanilla and add sugar.
Mix until well blended.
You can now toast coconut. I toast mine in a lightly sprayed skillet and keep tossing until golden. You can also place coconut on a baking sheet and toast in oven, turning frequently so not to burn.
I then gently remove the cake from the pan; and cut the cooled cake into 24 squares, and top with frosting and coconut. You can leave cake in pan and frost. I did it my way for presentation...

Greek Steak Pitas with Caramelized Onions and Mushrooms





























Ingredients

1 to 1 1/2 lb top sirloin steak, cut in thin strips
1 teaspoon dried oregano
1 teaspoon Cavender’s All Purpose Greek Seasoning 
1/2 teaspoon salt and pepper
2 large onions, sliced
8 fresh baby portabella mushrooms, sliced
2 tablespoons butter
5 tablespoons olive oil or canola oil, divided
Pitas

Directions

For the onions-Heat a skillet on medium low heat. Add the butter and 2 tablespoons of oil. 
Once the butter has melted, throw in the onions. Stir frequently. 
The onions should cook down for at least 30 mins. 
you may need to adjust the temperature if the onions begin to brown to soon. 
The key is low and slow.
While the onions cook, move onto preparing and cooking the steak.
For the steak-Combine sliced steak, oregano, cavender, salt and pepper in a ziploc bag. 
Mix until the seasoning has evenly coated the steak. 
Heat 1 tablespoon of oil in a cast iron skillet over medium high heat. 
Sear sliced steak in batches for 1 to 2 minutes per side depending on how done you like your steak. 
Do not over crowd the pan. Add 1 tablespoon of oil if the pan gets to dry. 
Once the steak is cooked, throw your mushrooms in the pan and saute until tender.
Assemble the pitas with steak, onions and mushrooms.

Joe’s Crab Shack Crab Cakes – Famous Recipe




















INGREDIENTS:
2/3 cup mayonnaise
5 egg yolks
2 teaspoons lemon juice
2 tablespoons Worcestershire sauce
2 teaspoons Dijon mustard
2 teaspoons black pepper
1/4 teaspoon salt
1/4 teaspoon blackening seasoning
1/4 teaspoon crushed red pepper flakes
1/2 cup crushed, chopped parsley
2 1/2 cups breadcrumbs
2 lbs crabmeat

DIRECTIONS:
Mix all ingredients together.
Make into 4 oz. patties
Coat with flour and fry in 1 inch of oil until golden brown.

1 large onion, chopped
3 16oz. cans Mexican chili beans
1 16oz. can corn
1 16oz. can chopped tomatoes
1 ½ c water
4 ½ oz. chopped green chilies
1 package taco seasoning mix
1 package Hidden Valley Ranch dry salad dressing mix

What To Do

All cans are UNDRAINED!
Cook beef with onion, drain off fat. Add all other ingredients and simmer for 15 minutes.
This is a hit, and freezes very well!

INGREDIENTS:
1 can (10 3/4 ounces) Cream of Chicken Soup
1/4 cup milk
3/4 cup shredded Cheddar cheese
1/4 teaspoon ground black pepper
Chopped onions (if you like )
Green peas
Boiled potatoes
Boiled chicken shredded or chunked
1 package (7.5 ounces) refrigerated biscuit dough (10 biscuits)

How to Make It

Heat the oven to 400°F. Stir the soup, milk, cheese and black pepper in a 3-quart shallow baking dish. Stir in the vegetables and chicken.Bake for 15 minutes or until the chicken mixture is hot and bubbling. Stir the chicken mixture. Top the chicken mixture with the biscuits.
Bake for 15 minutes or until the biscuits are golden brown

INGREDIENTS:
2 to 3 sheets of heavy-duty foil
1 packet onion soup powder
10-12 baby red potatoes, thinly sliced
12 slices of cooked and crumbled bacon
1 small onion thinly sliced and diced
1 cup cheese (optional)
Salt and pepper to taste
3 tablespoons butter
Sour cream for serving (optional)

DIRECTIONS:


Spray each sheet of foil with cooking spray. Top each piece with equal portions of potatoes, bacon, 1 packet onion soup powder and mix. Add salt and pepper to taste. Add 1 tablespoon of butter to each serving. Wrap securely.
Grill for 20 to 30 minutes. Or you can bake it in the oven, at 350° for about 35 minutes or till done. Let stand 10 minutes before serving. Serve in foil, topped with sour cream if desired.

Oatmeal Cake with Coconut Pecan Frosting


















INGREDIENTS:
1/2 C quick cooking oatmeal
3/4 C boiling water
1/2 C sugar
1/2 C brown sugar
2/3 C flour
1/2 tsp salt
1/2 tsp baking soda
1 egg
1/4 C of shortening
How to make it :


Mix the oatmeal with the boiling water, stir and cover. Mix the remaining ingredients then stir in the oatmeal mixture. Grease and flour a 9×9 pan. Pour batter into pan and bake at 350 for 23-25 minutes.
Coconut Pecan Frosting:
3 TBS melted butter
1/3 C brown sugar
1/2 C sweetened shredded coconut
1/2 C chopped nuts
2 TBS milk
1/2 tsp vanilla
Combine all ingredients and mix thoroughly. Carefully spread frosting over the top of the cake. Broil until coconut is just brown. Watch very closely – it doesn’t take long. Cool, slice and serve.

Ingredients:
1-1/2 c. sugar
1 c. sour cream
1/2 c. butter, softened
2 eggs
1-3/4 (3 or 4) ripe bananas, mashed
2 tsp. vanilla extract
2 c. all purpose flour
1 tsp. baking soda
3/4 tsp. salt
1/2 c. chopped walnuts (optional)
Brown Butter Frosting:
1/2 c. butter
4 c. powdered sugar
1-1/2 tsp. vanilla extract
3 tbsp. milk

Directions:
1. Heat oven to 375F. Grease and flour 15×10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.
2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.
3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.
4. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).

8 oz bacon. cooked and chopped
2 cup shredded cheddar
1 packages ranch dip mix
1 30 oz bag shredded hash browns


Directions:
30 minutes
Preheat the oven to 400°
Combine the first four ingredients in a large bowl.
Add hash browns. Stir well.
Spray a 13×9 casserole dish with nonstick cooking spray.
Spread mixture into dish.
Bake for 50-60 minutes. Until golden brown.
Let stand 10 minutes before serving.

Nannies Buttermilk Pie























1 3/4 C. sugar
1 stick unsalted butter (1/2 C.) room temp.
3 large eggs
1/4 tsp. vanilla extract 
pinch of salt
3 T. all purpose flour
1 C. buttermilk 
1 9" pie shell, unbaked

How to make it :
Cream together the sugar and butter till well blended. Beat in the eggs, 1 at a time, until the mixture is nice and smooth. Add in the vanilla, salt and flour. Beat in the buttermilk until well combined. Place the pie shell on a baking sheet lined with foil (catches any overflow). Fill the pie shell with the buttermilk mixture, just to the top of the shell. Pour any remaining into an ungreased custard cup. Bake at 300 degrees for 1 hour 10 minutes. Remove from the oven and let set until almost cooled before serving. Store covered in the fridge.

The Best Banana Cake - "In The World"


















1 1/2 cups bananas, mashed, ripe
2 teaspoons lemon juice
3 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup butter, softened
2 1/8 cups sugar
3 large eggs
2 teaspoons vanilla
1 1/2 cups buttermilk

Frosting:

1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla
3 1/2 cups icing sugar


How to make it :

1 Preheat oven to 275°F /135C.
2 Grease and flour a 9 x 13 pan.
3 In a small bowl, mix mashed banana with the lemon juice; set aside.
4 In a medium bowl, mix flour, baking soda and salt; set aside.
5 In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
6 Beat in eggs, one at a time, then stir in 2 tsp vanilla.
7 Beat in the flour mixture alternately with the buttermilk.
8 Stir in banana mixture
9 Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.
10 Remove from oven and place directly into the freezer for 45 minutes. This will make the cake very moist.
11 For the frosting, cream the butter and cream cheese until smooth.
12 Beat in 1 teaspoon vanilla.
13 Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.
14 Spread on cooled cake.
15 Sprinkle chopped walnuts over top of the frosting, if desired ( or hearts!).

“Lazy Man’s” Pie- Peach Cobbler

















Ingredients:
1 stick butter or margarine
1 C. milk
1 C. sugar
1 C. flour
1 tsp. baking powder
Dash of salt
1 qt. fruit, sweetened (peaches, cherries, blackberries, etc)

Instructions:
Melt butter in baking pan. Mix flour, sugar, baking powder, salt and milk. Pour batter in pan on top of butter; cover with fruit. Do not stir; batter will rise to top as it bakes and absorbs the flavor of the fruit. Bake at 350 degrees for 1 hour. Serve warm with whipped cream or ice cream. Enjoy!

Aunt Mary’s Banana Bread


















Ingredients:
1/2 C. butter or margarine
1 C. sugar
2 eggs, beaten
3 bananas, mashed (1 C.)
2 C. flour
1 tsp. soda
1/2 tsp. salt
1/2 C. nuts, chopped

Directions:
Cream butter and sugar together. Beat in eggs and mashed bananas. Sift dry ingredients together. Add to creamed mixture. Fold in nuts. Pour into greased 9x5x3″ loaf pan. Bake at 350 degrees for 1 hour. (May bake in muffin pans for delicious Banana Muffins. Bake for 20-25 minutes)

Note: Aunt Mary was known for her delicious Banana Bread, which she shared with everyone. We always had Aunt Mary’s Banana Bread at all family picnics. It’s one of best.
