ONION PARMESAN ROASTED RED POTATOES



WHAT YOU NEED:
2 lbs red potatoes, sliced 1/2 inch thick
1/3 cup vegetable oil...
1 (1 ounce) envelope dry onion soup mix
grated parmesan cheese
pepper

HOW TO MAKE IT:














1 - Combine all ingredients in a large plastic bag, seal and shake until well coated.
2 - Empty bag into a 13x9 dish, cover and bake at 350 degrees for 35 minutes, stirring occasionally.
3 - Uncover and bake 15 minutes longer or until potatoes are tender.

EASY STRAWBERRY PIE




Ingredients

1 refrigerated Pie Crust
2 cup sliced Strawberries
2 1/2 tbsp Cornstarch
1 1/4 cup Sugar
1 1/2 cup Water
1 box Strawberry Gelatin (like Jell-O)

Instructions

















Preheat oven to 350.
Place pie crust in pie pan and crimp edge.
Use a fork to poke holes in bottom.
Bake for 15-18 minutes or until edges are browned.
Allow to cool.
Layer bottom with the sliced strawberries
Stir together water sugar and cornstarch and bring to a boil.
Simmer, stirring constantly, until thickened.
Remove from heat, add Jell-O and stir until dissolved.
Pour mixture over strawberries.
Refrigerate until set.
You cab decorate with whipped cream before serving.

Crockpot Lasagna





















Ingredients:
1 pound Ground Beef
Lasagna noodles
1 jar spaghetti sauce
1 1/2 cups cottage cheese
1 1/2 cups shredded Mozzarella cheese
2 tablespoons grated Parmesan cheese

Directions
Brown ground beef and drain.
Spoon 1 Cup spaghetti sauce in bottom of 4 quart crock pot.
Mix remaining sauce with beef.
Place 2 uncooked lasagna noodles on sauce in crock pot.
Spread 1/3 meat mixture on top of noodles.
Spread 3/4 Cup cottage cheese over meat.
Sprinkle 1/2 Cup mozzarella cheese over cottage cheese.
Add another layer of uncooked noodles, 1/3 meat mixture, the remaining cottage cheese and 1/2 Cup mozzarella cheese.
Place another layer of uncooked noodles, meat mixture, and mozzarella cheese.
Sprinkle Parmesan cheese over top.
Cook on low for 4 hours.

If cooked much longer, it gets a bit well done.

Old Fashioned Salmon Patties



















what you need:

6 oz. can skinless/boneless pink salmon, drained
2 T. diced onion
good pinch each of salt and pepper
1 large egg
1 T. buttermilk
2 T. cornmeal
4 T. all purpose flour
Veg. oil for frying

How to make it :
In a bowl, combine the salmon, onion, salt and pepper. Stir in the egg, buttermilk, cornmeal and flour. Combine well. Heat about 1/4" oil in the bottom of a med. size iron skillet over med. high heat. Drop spoonfuls of the salmon mixture into the hot oil and flatten out just a tad. Fry, in batches, about a minute per side or until golden brown. Drain on a paper sack or paper towel lined plate. Makes 10 patties.

Mom’s Famous Cream Puffs

























Ingredients:

1 stick butter (8 Tablespoons)
1 cup water
1 tsp vanilla
4 eggs
1c flour
MOM’S FAMOUS FILLING:
1 pint heavy cream
1 package (3.4 OUNCES) instant vanilla pudding
⅓ cup milk
Makes approx 16

Instructions:

Bring the butter, water and vanilla to a boil.
Add the flour and stir constantly until it leaves the side of the pot and forms a ball.
Remove and cool.
Beat in 4 eggs, one at a time until smooth.
Drop by T. onto parchment lined cookie sheets
Bake at 400 degrees for about 25-30 minutes.
LET COOL.
Slice in half and pipe or scoop in Mom’s filling.
Dust with powdered sugar.
Filling:
Beat the cream, pudding powder and milk in a mixer until thick like whipped cream!

Cherry Cheese Coffee Cake

























For the Coffee Cake:
2 packages (8 oz. each) refrigerated crescent rolls
1 package cream cheese, softened
1/4 c. powdered sugar
1 egg
1/2 tsp. vanilla or almond extract
1 (21 oz.) can cherry pie filling (or any fruit pie filling, as long as it's in syrup!)

For the Glaze:
1/2 c. powdered sugar
2 to 3 tsp. milk

How to make it :
Preheat the oven to 350 degrees.
Unroll the crescent dough. Separate into 16 triangles, and set 4 aside for decoration.
On a baking sheet, arrange the 12 triangles into a circle so that the longer points are in the center but do not meet. Use a rolling pin to roll the dough into a 14-inch circle, pressing the seams together and leaving a 3-inch hole in the center.
For the filling, combine the cream cheese, powdered sugar, egg and vanilla in a medium bowl. Mix until smooth and creamy and then spread over dough. Leave about 1/2 inch uncovered at both edges of the dough. Top the whole thing with your pie filling.
Use a pizza cutter to cut those 4 triangles you set aside earlier into thirds. Start at the wider end, as it's easier to judge where your triangle should be cut. Arrange the strips evenly over the filling and press the ends to seal at the center and outer edges.
Bake for 25 to 30 minutes, or until it's golden brown. Then drizzle the glaze over the top!

BAKED VEGGIE EGG ROLLS
























what you will need:

1 tsp olive oil
2 cups of cabbage, chopped
2 cups of shredded carrots...
2 tbsp green onions, sliced
Any other veggies you like, water chestnuts, bean spouts, etc..
1 tsp fresh ginger, grated
2 tbsp soy sauce
1 tbsp corn starch
1/4 cup water
14 egg roll wraps

Sweet chili dipping sauce or sweet and sour sauce (for dipping)

How to make it :

Heat the olive oil in a large skillet over medium heat. Once hot add the cabbage, sprouts, carrots, chestnuts and ginger to the pan and cook, stirring frequently for 4-5 minutes, until the vegetables just begin to wilt but still remain a little bit crisp. Mix the corn starch with the water and mix thoroughly. Add the corn starch mixture and soy sauce to the pan along with the green onions. Cook for an additional 1-2 minutes or until the sauce thickens. Remove from heat and let cool.
Place two tablespoons of the cooled mixture on the center of the egg roll wrap. Fold the bottom up over the filling. Next, fold the two sides over, making it look like an envelope, then roll it up like a burrito.
Preheat the oven to 400 degrees. Spray a baking sheet with cooking spray. Place the rolled up egg rolls on a baking sheet. Once you have rolled them all, spray the top of each egg roll with cooking spray.
Place in the oven and bake for 8-10 minutes then turn them over. Bake for an additional 5-7 minutes or until crispy and golden brown. Serve with sweet chili sauce or sweet and sour sauce. Enjoy!!

Comforting Chicken & Noodles Crock Pot






















Ingredients:

2 cancream of chicken soup
2 canchicken broth (15oz each)
1 stickbutter or margerine
1 lbchicken breasts (fresh or frozen)
1 packagesfrozen egg noodles (24 oz) I used Reames. +

Instructions:

In crockpot put chicken on bottom. Pour the chicken broth and soup on top. Then top that with the stick of butter. Put the crockpot on low for 6-7 hours.
Take the chicken out and shred. Put back in crockpot.
Add the frozen noodles and cook for 2 more hours. (I stir every 30 minutes until done.)

The one thing better than a traditional pound cake is a cream cheese pound cake! I had some friends yesterday, and I made this cream cheese pound cake over tea, it was perfect! Check it out.

You’ll Need:
1 (8 ounce) package of cream cheese.
1 ½ cups of butter.
3 cups of white sugar.
6 eggs.
3 cups of all purpose flour.
1 tsp of vanilla extract.

How to:
Cream together the butter and cream cheese until smooth in a large bowl then add in the sugar gradually while beating.
Add two eggs at a time while beating then add in the flour and mix to combine. Mix in the vanilla extract.

In a greased and floured 10 inch tube pan, pour the batter and bake for 1 hour and 20 minutes in a preheated oven to 325°.

Chicken & Dumpling Casserole






















I love chicken, especially when it’s baked on the oven! This chicken and dumpling casserole is my latest discoveries! It’s very creamy, tender and delicious! You should give it a try!

You’ll Need:

2 cups of chicken broth.
2 lbs of chicken.
1 (10.5 oz) can cream of chicken soup.
2 tbsps of melted unsalted butter.
½ tsp of black pepper.
1 cup of all purpose flour.
¼ tsp of salt.
1 cup of milk.

How to:
Over medium heat, cook the chicken in a pot covered with water for 1 hour.
Remove the chicken from the pot and save the water.
Shred the chicken and arrange in an 11×7 baking dish.
In a bowl, mix together the flour, milk and butter and pour over the chicken.
In a separate bowl, mix together the broth, soup, salt and pepper and pour over the chicken.

In a preheated oven to 350° bake for 45 to 50 minutes.

Crockpot Christmas Crack




















I love peanuts, they taste so good! Once I was in my neighbour’s house and she served this christmas crack, I was crazy over it so I asked for the recipe! Here you go.

You’ll Need:
1 (16 oz) jar of unsalted peanuts.
1 (16 oz) jar of salted peanuts.
1 (12 oz) bag of semi-sweet chocolate chips.
1 (12 oz) bag of milk chocolate chips.
2 (10 oz) bags of peanut butter chips.
2 (1 lb) packages of white almond bark or vanilla candy coating.

How to:
Place the peanuts in the crockpot and layer all the other ingredients on top.
Cover the pot with lid and let sit on low for 2 hours.

Stir all the ingredients together to combine, recover and let sit for 30 more minutes.
Stir the mixture then spoon it onto wax paper.

Let harden to room temperature for an hour or so.

Simple, easy and sweet! The mixture of salt and sweet makes these delights crazy good! Give it a try, you will love it.

Slow Cooker Philly Cheese Steak



















Sometimes we are just too tired of cooking, we just want a sandwich for lunch as a change right? I made this slow cooker philly cheese steak many times for dinner, and sometimes for lunch! Check it out.

You’ll Need:
2 ½ to 3 pounds of beef round steak.
2 sliced thin green peppers.
2 sliced thin onions.
3 cups of beef stock.
2 tsps of garlic salt.
2 tsps of black pepper.
1 envelope of dry Italian dressing mix.
1 to 2 large loaves of french bread sliced into sandwich lengths.
Provolone cheese slices.

How to:
In a sprayed slow cooker, place the thin strips of meat and add in the green pepper, onion, stock, garlic, salt, pepper and dressing mix.

Cook covered for 7 to 8 hours on low or 3 to 4 hours on high.

Fill the french bread sandwiches or the toasted buns if you want to and top them with cheese.
Bake in a baking sheet for a couple of minutes to melt the cheese and serve with sauteed mushrooms on top if you want to.
Enjoy!

In a greased 8×8 baking dish, layer half of the crescent rolls.

Blend the cream cheese in a medium bowl until smooth. Blend in powdered sugar and vanilla.

Spread the cream cheese mixture over the crescent rolls evenly and top with cherry pie filling.

Top with the 4 triangles left of the crescent rolls. Melt the butter and pour it over the top. And sprinkle granulated sugar over the top.

In a preheated oven to 375° bake for 25 minutes and Voila!

Simple, easy and sweet! When I make this, there’s never any leftovers! We eat the whole thing. Give it a shot, you’ll thank me later.
