STRAWBERRY CREAM CHEESE ICEBOX CAKE


























Ingredients
2 lb. strawberries
2 sleeves graham crackers
1 -8 oz. pkg. cream cheese, room temperature
1 -14 oz. can sweetened condensed milk
2- 3.4 oz. pkg. instant cheesecake flavored pudding
3 cu. milk
1- 12 oz. carton whipped topping, divided

Directions
Wash, cut tops off of strawberries and slice them 1/4 inch thick then set aside. Line bottom of a 3-quart 13×9 baking dish with graham crackers and set aside. Combine cream cheese and sweetened condensed milk in a large bowl and beat with a mixer until smooth and creamy. Add pudding mixes and milk then continue mixing on low for 4-5 minutes or until mixture starts to thicken. Fold in 2 cups whipped topping until smooth. Pour half of the cream cheese mixture over graham crackers. Arrange a single layer of strawberry slices over cream cheese mixture. Top strawberries with another layer of graham crackers then cover with remaining cream cheese mixture. Top cream cheese mixture with another layer of strawberries.
Cover and refrigerate for 6-8 hours. When serving, top with remaining whipped topping. Crush remaining graham crackers and sprinkle crumbs over the top.

Old Fashioned Salmon Patties



















Ingredients:
6 oz. can skinless/boneless pink salmon, drained
2 T. diced onion
good pinch each of salt and pepper
1 large egg
1 T. buttermilk
2 T. cornmeal
4 T. all purpose flour
Veg. oil for frying

How to make it :
In a bowl, combine the salmon, onion, salt and pepper. Stir in the egg, buttermilk, cornmeal and flour. Combine well. Heat about 1/4" oil in the bottom of a med. size iron skillet over med. high heat. Drop spoonfuls of the salmon mixture into the hot oil and flatten out just a tad. Fry, in batches, about a minute per side or until golden brown. Drain on a paper sack or paper towel lined plate. Makes 10 patties.

Easy salsa recipe


























Ingredients:
1- 14 oz can diced tomatoes
1- 10 oz can orginal Rotel
1/2 small onion, roughly chopped
1 clove garlic, peeled and smashed
1/2-1 jalapeno, seeded or not (depends on how spicy you like it)
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon ground cumin
small to medium size handful of cilantro, washed
juice of 1 lime

How to make it :
Put all the ingredients in the base of a food processor or good blender and pulse to combine for 30 seconds or so until all the ingredients are finely chopped and salsa is desired consistency. Taste for seasoning and adjust to taste. Serve with chips or over tacos.

Texas Roadhouse's Rolls

























Ingredients

 1 cup warm milk
1 package or 2 1/4 teaspoons active dry yeast
1/3 cup sugar
3 1/2 cups all-purpose four, plus more for the board
1 egg
1/3 cup butter, melted plus 1/4 cup butter, melted (optional)
1 teaspoon salt

Honey Cinnamon Butter
1/2 cup softened butter
1 teaspoon cinnamon
2 tablespoons honey
2 tablespoons powdered sugar

How to make it :
In a cup or small bowl, stir together the warm milk, sugar, and yeast. Allow the yeast to proof and begin to activate while you prepare the other ingredients. (This is not necessary, but I prefer this to using milk cold out of the refrigerator). Using a stand mixer or food processor, combine the flour, egg, 1/3 cup melted butter, and salt. Add the milk mixture and process until you have a smooth dough; it will be stickier and wetter than regular bread dough. Place the dough in a greased bowl, turn the dough to grease all sides, and cover with a towel. Let rise until it has doubled in size. When the dough has doubled, punch it down and turn it out on a floured board. Let rest for 10 minutes. Roll out the dough into a large, flat rectangle approximately 1/2 inch thick. Cut into 16 portions with a sharp knife and place on a greased baking sheet and let rise again, until doubled. Preheat oven to 375 degrees. Bake the rolls for 10 minutes on the greased baking sheet. They will be light brown when removed from the oven. If desired you can brush the tops of the rolls with the remaining 1/4 cup melted butter before serving .
Prepare honey cinnamon butter by combining butter, cinnamon, honey, and powdered sugar until well blended.

Cracker Barrel Meatloaf !!!!























what you need:
2 eggs
2/3 cup milk
32 Ritz crackers, crushed
1/2 cup chopped onion
4 ounces shredded sharp cheddar cheese
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 lbs ground beef
1/2 cup ketchup
1/2 cup brown sugar
1 teaspoon mustard

how to make it:
Preheat oven to 350.
Beat eggs. Add milk and crackers. Stir in onion and cheese. Add ground beef. Mix well. Shape into a loaf.
Bake at 350 for 45 minutes.
Combine ketchup, brown sugar and mustard to make topping. Spoon half of the topping over the meatloaf after 30 mins of baking. Return loaf to oven for 10 more mins of baking. Spoon the rest of the topping over meatloaf, return to oven and bake for 5-10 mins more.

BEST BANANA BREAD























Ingredients :
1/2 cup butter, melted
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1/2 cup chopped walnuts
2 medium bananas, sliced

Directions :
Preheat oven to 350 degrees F (175 degrees C). Grease a 9×5 inch loaf pan.
In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Finally, fold in the sour cream, walnuts and bananas. Spread evenly into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely

Southern Candied Sweet Potatoes




















Ingredients:
2 cups white sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 pinch salt
1/2 cup butter
6 sweet potatoes, peeled and sliced
1 tablespoon vanilla extract


Instructions:
In a small bowl, mix the sugar, cinnamon, nutmeg, and salt together.
Melt butter in a large skillet over medium heat; add sweet potatoes, and stir to coat.
Sprinkle sugar mixture over the sweet potatoes, and stir.
Cover skillet, and reduce heat to low.
Cook, stirring occasionally, for 1 hour, or until the sauce is dark and the potatoes are candied.
They should be tender, but a little hard around the edges.
Stir in vanilla, and serve.

1 (10 ½-ounce) can French onion soup
1 1⁄2 lbs ground sirloin
1⁄2 cup dry breadcrumbs
1 large egg
1 yellow onion, chopped fine
Salt and ground black pepper, to taste
2 tsp. onion powder
1 tbsp. flour
3/4 cup ketchup, divided
3 tsps. Worcestershire sauce, to taste
1⁄2 tsp. mustard powder
1 cup beef broth


how to make iiiiiiiiiiiiiit:
In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg,  1 tsp. Worcestershire sauce, 1/4 cup ketchup, ½ cup chopped onion, 1 tsp. onion powder, salt and black pepper. Shape into 6 oval patties.

In a large skillet over medium-high heat, brown both sides of patties in 1 tbsp. butter and 1 tbsp. olive oil. Remove patties to a plate; pour off excess fat from skillet.

In a small bowl, blend flour and remaining soup until smooth; mix in remaining ingredients. Pour into skillet and stir until thicken. Reduce heat, add patties and spoon sauce over them.  Cover, and cook for 20 minutes, stirring sauce occasionally.

Fried Apple Pies






















what you need:
1 pot of cooked apples
sugar to your taste
spices ( cinnamon, cloves, apple pie spice) to your taste
peanut oil for frying.

How to make it :
You can use dried fruit or fresh apples. You use your own judgement on how many apples to cook, to how many pies you want to make.
I peel,core,& slice my apples. Put them in a sauce pan with very little water & cook slowly. The apples will make some juice their self. If you get too much liquid you can add a little cornstarch to the sugar to thicken. DON"T ADD The sugar until the apples has cooked.
Take off the heat and let it get cooled off. You don't want it to be warm, it will mess the dough up.
Sometimes I make my on crust, but most of the time I just use can biscuits. I get the store brand, they work best. DON"T get the buttermilk biscuits, get the home style. The name brand usually has kosher salt, it will make little holes in the crust when you fry them. So the store works best.
Flour you pastry sheet, put a biscuit on it and roll out as if you're make a crust.Dampen the edge of the dough so it will seal off better. Place about 1 1/2 teaspoon of filling in the middle. It really depends on how much you roll the crust. You don't want it thick or too thin to tear when you're frying them. Dampen edge with water using your finger tip.
Fold over the crust, take a fork and press around the edge, turn over and repeat the edge again.
I use an electric skillet with peanut oil. Lay your pie in the skillet when you think the oil is hot enough. When you lay the pie in, it should start to sizzle around the edges. Fry it until golden brown, turn & fry on the other side.
I usually have my skillet temp. around 300 degrees, but the temp can vary on different skillet, just keep a close eye, & don't burn them.
Lay on paper towels to drain. I sprinkle with a sugar & cinnamon mixture in a salt shaker. Then enjoy!! Every time I take these pies for a get together, whether home or church, these pies disappear fast.

Ingredients
1 cup butter
1 1/2 cups white sugar
1 1/2 cups brown sugar
4 eggs
3 teaspoons vanilla

2 cups sweetened coconut
2 cups chopped almonds

How to make it
Pre-heat oven to 375°F Lightly grease cookie sheets.
Combine dry ingredients, set aside.
In a large bowl, cream the butter and sugars together. Beat in the eggs, one at a time, stir in the vanilla. Stir in the dry ingredients until well mixed then stir in the chocolate chips, coconut and almonds. Drop by rounded tablespoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes. Cool on baking sheet for 5 mins before removing to a wire rack to cool completely

Farmer Casserole





























Ingredients

6 c diced potatoes (I used Simply Potatoes diced potatoes with onion)
1 tbsp extra virgin olive oil
1 1/2 c reduced fat Colby & Monterrey blend cheese, shredded
6 slices Canadian bacon, diced
2 sliced green onions
24 oz. (2 cans) fat-free evaporated milk
2 c Egg Beaters egg substitute
1/4 tsp salt
1/4 tsp black pepper

How to make it

1. Preheat oven to 375°.
2. Heat oil in a non-stick skillet over medium heat. Add potatoes to skillet and cook until lightly browned.
3. Add cooked potatoes to bottom of a casserole dish. Layer ham, cheese, and green onion on top of potatoes.
4. In a large mixing bowl, combine Egg Beaters, evaporated milk, salt, and pepper. Stir to combine. 
5. Pour egg mixture potato mixture in casserole dish. 
6. Bake for 45-55 minutes or until egg is set. Remove from oven, let set for 5-10 minutes. Cut into 15 equal portions. Serve immediately.

Yields 15 servings, serving size 1 piece

HOT FUDGE PIE

























what you will need :
 1 stick butter, softened
1 c sugar
2 eggs
1 tsp vanilla
3 Tbsp cocoa powder
1 tsp salt
1/2 c all purpose flour

How to make it ;

Preheat oven to 350 degrees.
Cream together butter and sugar with electric mixer until fluffy, about 3 minutes. Add eggs and vanilla and mix well. Add cocoa powder, salt and flour and stir until well combined. Grease 8 inch pie pan with butter or cooking spray, pour mixture into pie pan. Bake 30 to 35 minutes until center is set.
Hand mix to make it gooey, because if you use a mixer, it will have more of a brownie or cake texture, rather than "gooey".
