Banana Cream Pie









Ingredients
1 2/3 cups water
3 tablespoons cornstarch
1 (14 ounce) cans Eagle Brand Condensed Milk
3 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla
1 (9 inch) pie crusts, baked
3 medium bananas, sliced
Directions

Mix water and cornstarch until smooth.
Stir in Eagle Brand milk and egg yolks.
Cook until thick in saucepan or microwave.
Stir in 2 tablespoons butter.
Add vanilla.
Cool slightly (stirring occasionally).
Pour 1/2 of filling on pie crust.
Place sliced bananas on filling.
Pour remainder of filling on the sliced bananas.
Preheat oven to 400°.
Top with meringue and brown in a preheated 400°F oven.
Or may top with whipped cream after chilling pie.

Cheesy Ham and Potato Casserole









2 large potatoes
3-4 broccoli stems, chopped (you could use the florets too, I only had stems leftover)
1 small onion, chopped
10 3/4 oz. can broccoli cheese soup
1/2 C. milk
3 T. butter, melted
3 C. cubed ham
1 C. shredded sharp cheddar cheese
1/2 tsp. each salt and pepper
1/2 tsp. garlic powder

Wash the potatoes (I left the skins on, you can peel them if you prefer), Slice and cut the potatoes into bite size pieces. Place the potatoes in a pot along with the chopped broccoli stems and cover with water. Bring to a boil and cook until just fork tender (like you would for potato salad). Drain and set aside. In a large bowl add the soup, milk, butter and seasoning. Combine well, add the potato mixture, onion, ham and cheese. Stir well, pour into a lightly greased casserole dish and bake at 350 degrees for 25-30 minutes. Should be bubbling around the edges. Remove and let sit for 5 minutes before serving

FRENCH TOAST BAKE







 -- The ideal breakfast for Christmas morning! Easy too! Prepare the night before and pop in the oven Christmas morning. SO DELISH! Your family will sing Hallelujah!

1/2 cup melted butter (1 stick)
1 cup brown sugar
1 loaf of thickly sliced bread
4 eggs
1 1/2 cup milk
1 teaspoon vanilla
Powdered sugar for sprinkling
Cinnamon for sprinkling

1. Melt butter in microwave & add brown sugar....stir till mixed.
2. Pour butter/sugar mix into bottom of 9 x 13 pan....spread around.
3. Beat eggs, milk, & vanilla
4. Lay single slices of bread in pan
5. Spoon 1/2 of egg mixture on bread layer
6. Sprinkle some cinnamon over bread/eggs
7. Add 2nd layer of sliced bread
8. Spoon on remaining egg mixture
9. Cover & chill in fridge overnight
10. Bake at 350 for 45 minutes (covered for the first 30 minutes)
11. Sprinkle with powdered sugar & cinnamon
12. Serve with warm maple syrup

TURTLE CARAMEL CAKE












INGREDIENTS

1 cup chocolate chip
Toll House Morsels Semi-Sweet Chocolate
2 For $4.00

2 cups pecans

3/4 cup melted butter

1/2 cup evaporated milk

1 (14 ounce) bags caramels

1 1/3 cups water ( or as called for by your cake mix)

1/3 cup oil ( or as called for by your cake mix)

3 eggs ( or as called for by your cake mix)

1 (18 ounce) boxes German chocolate cake mix

Directions

Preheat oven to 350 degrees F (175 degrees C). 

Lightly grease one 9x13 inch pan.

Prepare cake mix according to package directions and pour 1/2 of the batter into the prepared pan. Bake at 350 degrees F (175 degrees C) for 15 minutes.

In a saucepan melt caramels, 3/4 cup of the butter or margarine, and evaporated milk, pour over baked cake. 

Sprinkle chocolate chips and chopped pecans over caramel mixture. 

Pour remaining cake batter on top and bake for 20 minutes at 350 degrees F (175 degrees C). 

Cool and frost.

To Make Frosting: Melt 2 tablespoons of the butter or margarine and the unsweetened chocolate together. Remove from heat and add the corn syrup, vanilla, confectioner's sugar, and milk, mix well and use to frost cooled cake.

The Old Fashioned Custard Pie











1 unbaked pie shell (I use Marie Callendar's deep dish)
3 large eggs
½ cup of sugar
½ teaspoon of salt
½ teaspoon of nutmeg
2-2/3 cups of milk
1 teaspoon pure vanilla extract

How to prepare :

Pre-heat the oven to 350 degrees. Beat your eggs slightly, then add sugar, salt, nutmeg, and milk. Beat well and poor into the unbaked pie shell. Bake for 35 to 40 minutes. Remove from oven and cool. Sprinkle the top of pie with fresh ground nutmeg and serve.

AMAZING FORGOTTEN CHICKEN







1 lb boneless skinless chicken breasts
2 cups Minute rice (I used brown rice)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can of water (use one of the soup cans)
1 tbsp. butter
1 envelope Lipton onion soup mix

How to make it :

Using the 1 tbsp. butter, butter a 9 x 13 baking pan.
In a medium bowl, combine the cream of mushroom soup, cream of chicken soup, 1 can of water, and Minute rice.
Pour mixture into buttered pan.
Place chicken breasts on top of mixture.
Sprinkle Lipton onion soup evenly on top of chicken breasts.
Cover pan with foil and place in a preheated oven, 350.
Cook for about 1- 1 1/2 hours, or until the chicken is cooked through.

Oven Baked Tacos










 Ingredients

2 lb ground beef
1 can refried beans
1 can of tomato sauce
1 packet taco seasoning
1 oz shredded cheese
12 tortillas/taco shells

Directions : 

Start with the taco shells, buy them in the store or make em yourself. If you make them yourself, I don’t think you will ever go back to purchasing taco shells. All you need is some tortillas and cooking spray. We used some small, soft “taco” tortillas. We used the flour kind but corn is fine too.

First you want to steam them… Wet some paper towels and wring them out well. Layer the tortillas with the wet paper towels on a plate and then microwave (we did 6 at a time). Keep an eye on them, it should be about 30 seconds until they are steamed. Then lightly spray each side with cooking spray and drape each tortilla over two bars of the oven rack. It is wise to put a baking sheet below them to catch any oil from the cooking spray. Bake at 350-375 degrees for 7-10 minutes. You will be able to tell that they are browning & getting crispy. Take them out and set them aside!

Okay, now for the filling All you need is ground beef (2 pounds), 1 can of refried beans, 1 can of tomato sauce, 1 packet of taco seasoning, shredded cheese, & your favorite taco toppings.

Brown the ground beef in a large skillet. COMPLETELY drain all grease and return to skillet. Over low heat, add refried beans, taco seasoning, and about half to two-thirds of the tomato sauce (you can eye this to see whats best, you don’t want the filling to be too runny or your tacos will be soggy on the bottoms). Blend well and scoop into the tacos (which should be “standing” in a lightly greased casserole type dish). Then just sprinkle the cheese over the top and bake. I think I did my at 375 degrees for about 10 minutes.
