TONS OF BLUEBERRY COFFEE CAKE





















INGREDIENTS  
1/4 cup butter (margarine) 
3/4 cup sugar 
1 egg 
1/2 cup milk, plus 
2 tablespoons milk 
2 cups all-purpose flour 
2 teaspoons baking powder 
1/2 teaspoon salt 
2 cups blueberries 
topping
1/2 cup brown sugar 
3 tablespoons all-purpose flour 
1 teaspoon ground cinnamon 
1/2 cup chopped pecans 
3 tablespoons butter (margarine) 

DIRECTIONS
1. Preheat oven to 375. Grease 9 inch springform pan. 
2. Sift together flour, baking powder and salt, set aside. 
3. In a large pan (I use my kitchen aid) cream together the butter and sugar so long as light and fluffy. Beat in egg. Beat in the flour mixture alternately with the milk, mixing just so long as incorporated. Stir in blueberries. Pour batter into prepared pan. In a small pan or bowl, combine topping ingredients ( I added the nuts last) Cut in butter so long as crumbly -- and add nuts. Sprinkle over batter. 
4. Bake for 45 mins (for some reason when I make it -- it takes closer to 1 hour) so long as toothpick inserted into the center comes out clean. 
5. Allow to cool. 
6. I like to remove cake to cake plate and dust with powdered sugar.

8. I feel awfully silly, but I have figured out why the times vary -- when using frozen blueberries -- the time is closer to an hour. Fresh berries -- 45 mins.

Ingredients and Directions:
1 Cup butter
1 Cup sugar
1 Cup packed brown sugar
Cream together and add 2 eggs.
Add: 1 tsp vanilla, 1 tsp soda, 1/2 tsp salt, 1/2 tsp baking powder, 2 cups flour and 2 Cups oatmeal.
After all is blended add 2 Cups of chocolate chips & walnuts to taste.
Drop by large spoon on cookie sheet.
Bake at 350* 12-15 minutes.

Crazy Crust Pie



















Ingredients:
1 C. flour
1/4 C. sugar
1 tsp. baking powder
1/2 tsp. salt
1/2 C. butter or margarine, softened
3/4 C. milk
1 egg
1- 21 oz. can fruit pie filling (apple, cherry, peach, blueberry, blackberry, etc.)
Sugar (or cinnamon-sugar)

Instructions:
Combine flour, sugar, baking powder, salt, shortening, milk and egg. Beat well. Pour batter into a well greased 9″ pie plate. Pour pie filling into center of batter (to 1″ of edge). Sprinkle with sugar (if apple or peach is used, sprinkle with cinnamon sugar). Do not stir. Bake at 375 degrees for 35 to 40 minutes, or until brown and dough is done. Makes 6 servings.

Double Chocolate Coca Cola Cake
















Ingredients:
1 cup Coca Cola (real thing, not diet)
1/2 cup oil
1 stick butter
3 Tablespoon cocoa
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla

Frosting:
1 stick butter
3 Tablespoon cocoa
6 Tablesppon of cream or milk
1 teaspoon vanilla extract
3 3/4 cups confectioner’s sugar


Directions:
In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil. In another bowl, combine the sugar, flour and salt. Pour the boiling Cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, soda and vanilla and beat well. Pour mixture into a greased and floured 13 x 9 inch baking pan and bake at 350 degrees or 20 to 25 minutes. Remove pan. Cool for about 10 minutes before frosting.

Frosting: In a saucepan, combine the butter, cocoa, and milk. Heat until the butter melts. Beat in the remaining ingredients and spread on the cake while it’s still warm.

INGREDIENTS:
3 large eggs
1 box cake mix (any flavor)
1 can pie filling (any flavor)

DIRECTIONS:
Put the three ingredients into a bowl, mix them well, and bake for 35 minutes at 350 degrees in a 9×13 pan.
It’s got almost a pudding-cake kind of consistency, lighter than pound cake. It’s spotted on the inside with little pieces of whatever fruit filling you are using. The edges are crispy, like you would get on brownies.

Pineapple Pie~ (Johnny Cash’s Mother’s Recipe)
























Ingredients:
1 1/2 cups sugar
1/2 cup butter
1 cup crushed pineapple
3 tablespoons flour
1 teaspoon vanilla
2 eggs
1 unbaked pie shell

Directions:
Beat together all ingredients.
Pour into unbaked pie shell and bake 50 minutes in 350 degree oven or until it sets and is brown.

Mac and Cheese



















what you need: 
1 lb. cavatappi pasta (or pasta of your choice)
½ c. butter
½ c. flour
4 c. milk
6 c. freshly shredded sharp or white Cheddar
1 T. salt
up to 1 T. pepper
2 T. butter
½ c. panko bread crumbs

 how to make it :
Boil pasta in salted water according to package directions. Melt butter in large saucepan over medium heat. Sprinkle in flour and whisk and cook 2-3 minutes. Add in salt and pepper. Slowly pour in 4 c. milk whisking until smooth and heating to a low boil until thickened. Do not stop until thick. Remove from heat.
Grease a 9x13" baking dish and add the hot pasta to the dish. Over the top sprinkle 6 c. of freshly shredded cheese. Pour the thickened cream sauce over the hot pasta and cheese and let it sit until the cheese melts. Stir everything together.
Melt 2 T. butter over medium heat. Add in panko bread crumbs, stirring constantly 3-5 minutes or until golden brown. Pour over the mac and cheese.
Bake in a preheated 325 degree oven 12-15 minutes.
