Hey there, I’m Rolla!

Let me tell you about the first time I made this Double Chocolate Coca Cola Cake. My oldest was turning eight and I wanted something special but not too fancy. I found an old recipe card at my neighbor’s house and thought, “Coca Cola in a cake? That sounds crazy.” But I tried it anyway.

Oh my goodness — the whole kitchen smelled like the best chocolate shop in town. When I pulled it out of the oven, my kids came running. That glossy frosting poured over the warm cake and sank in just a little… they were fighting over who got the corner pieces with extra frosting.

Fifteen years later, I’ve probably baked this Double Chocolate Coca Cola Cake more than fifty times. It’s been to birthday parties, church suppers, family reunions, and even a few “I had a rough day” evenings. My husband still says it’s his favorite cake ever, and my grandbabies call it “the special black cake.”

There’s just something about that secret Coca Cola touch that makes the cake unbelievably tender and chocolatey. It’s not too sweet, stays moist for days, and the frosting? Pure heaven. Even if you’re not a confident baker, this one is forgiving and turns out beautiful every single time. I promise you’ll get requests for the recipe — I always do!

Recipe Card

Prep Time: 20 minutes Cook Time: 20-25 minutes Total Time: 50 minutes Servings: 12-15 Difficulty: Easy Cuisine: American Course: Dessert

This is my go-to when I need a cake that makes everyone happy.

Ingredients

Cake:

  • 1 cup Coca Cola (real thing, not diet — trust me on this)
  • ½ cup oil
  • 1 stick (½ cup) butter
  • 3 tablespoons cocoa powder
  • 2 cups sugar
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla

Frosting:

  • 1 stick (½ cup) butter
  • 3 tablespoons cocoa
  • 6 tablespoons milk or cream
  • 1 teaspoon vanilla extract
  • 3¾ cups powdered sugar

I always use real butter. It just tastes better.

Instructions

  1. Preheat oven to 350°F and grease a 13×9 pan really well.
  2. In a saucepan, mix Coca Cola, oil, butter, and cocoa. Bring to a boil while you stir. The smell is amazing already.
  3. In a big bowl, stir together sugar, flour, and salt.
  4. Pour that hot cola mixture over the dry ingredients and beat until smooth.
  5. Add eggs, buttermilk, baking soda, and vanilla. Mix well — the batter will be thin, but that’s exactly what you want.
  6. Pour into your pan and bake 20-25 minutes until the center springs back when touched.
  7. Let it cool about 10 minutes while you make the frosting.

For the frosting: Melt butter, cocoa, and milk in a saucepan. Take off heat and beat in vanilla and powdered sugar until nice and smooth. Spread over the warm cake — it gets all fudgy and delicious.

Why You’ll Love This Recipe

  • It stays incredibly moist for days (thanks to the Coca Cola trick)
  • That shiny frosting is lick-the-bowl good
  • Super easy — even my beginner friends nail it
  • My family goes crazy for it every single time
  • Perfect for potlucks because it travels so well
  • Rich chocolate flavor without being too sweet
  • Makes the house smell like heaven

Equipment You’ll Need

  • Medium saucepan
  • Large mixing bowl
  • 13×9 baking pan
  • Spoon or mixer
  • Measuring cups

My Best Cooking Tips & Kitchen Secrets

I always let my eggs and buttermilk sit out for a bit so they mix better. Don’t overbake — 22 minutes is usually perfect in my oven. Make the frosting while the cake bakes so you can spread it while the cake is still warm. That’s the secret to that beautiful fudgy top. If the frosting gets too thick, splash in a tiny bit more milk.

Fun Variations & Substitutions

  • Use Cherry Coke for a fun cherry-chocolate twist
  • Stir in ½ cup chocolate chips for extra pockets of chocolate
  • Make cupcakes instead (bake about 18 minutes)
  • Add a pinch of cinnamon for a warm Mexican chocolate vibe

How to Store & Make Ahead

This cake stays perfect on the counter for 3-4 days in a covered container. It also keeps a week in the fridge. Freezes great — I wrap slices individually and pull one out whenever I need a treat. Tastes almost as good as fresh after thawing.

Perfect Serving Ideas

Slightly warm with vanilla ice cream is my family’s favorite. Cold with coffee in the morning is pretty wonderful too. Great cut into small squares for parties or with fresh berries on the side.

Frequently Asked Questions

Can I use diet Coke? I really don’t recommend it — the real sugar is part of what makes it so good.

Does it taste like soda? Not at all. Just deep, rich chocolate flavor.

Can I make it ahead? Yes! Bake the cake the day before and frost fresh if you want.

My frosting is too thick? Add milk one teaspoon at a time until it’s spreadable.

Can I use a round pan? Sure, but watch the baking time.

Is buttermilk necessary? It makes it extra tender, but milk + lemon juice works fine.

How do I store leftovers? Covered at room temp for a few days or fridge for longer.

Can I double it? Absolutely — perfect for big crowds.

Introduction

Hey friends! Today I’m sharing something that’s been a staple in my kitchen for years — my Classic Southern Pimento Cheese Spread.

I first tasted real pimento cheese at a church potluck when I was young, and I was hooked from the first bite. When I tried making it myself the first time, I put way too much mayonnaise and it came out too soft. My husband laughed and said it tasted good but looked like dip! After tweaking it a few times, I finally nailed the perfect creamy, cheesy texture with just the right amount of spice.

Now I make this almost every time we have company or when I need a quick snack. My kids love it on crackers or in sandwiches, and my husband steals spoonfuls straight from the bowl. There’s just something so comforting and nostalgic about that tangy, cheesy spread with little bits of sweet pimentos.

It’s super simple, only takes a few minutes, and always disappears fast. If you’ve never made homemade pimento cheese before, I promise you’re going to love this version!

Recipe Card

Prep Time: 10 minutes
Chill Time: 15 minutes (optional but recommended)
Total Time: 10 minutes
Servings: About 2.5 cups
Difficulty: Easy

  • 8 oz cream cheese, softened to room temperature
  • ½ cup mayonnaise
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ½ teaspoon onion powder
  • 4 oz diced pimentos, drained
  • ½ teaspoon dried mustard

Mixing the spread

Instructions

  1. In a mixing bowl, beat the shredded cheddar cheese and softened cream cheese together with an electric mixer for 2–3 minutes until nice and creamy.
  2. Add the mayonnaise and mix well.
  3. Now stir in the garlic powder, paprika, onion powder, and dried mustard.
  4. Gently fold in the drained diced pimentos until everything is evenly combined.
  5. Taste and adjust seasoning if you like.
  6. Refrigerate for at least 10–15 minutes so the flavors can come together beautifully.

  • Ready in just 10 minutes
  • So much better than store-bought
  • Perfect for parties or quick snacks
  • Creamy with just the right tang
  • My family goes crazy for it
  • Super versatile
  • Keeps well in the fridge

Equipment You’ll Need

  • Don’t drain the pimentos too much — a little liquid adds flavor.
  • I always make a double batch because it disappears fast!

Fun Variations & Substitutions

  • Add a pinch of cayenne for a spicy kick
  • Mix in chopped jalapeños or green onions
  • Use half pepper jack cheese for more heat
  • Try smoked paprika for a smoky twist

How to Store & Make Ahead

Store in an airtight container in the refrigerator for up to 7 days. It actually tastes even better the next day!

There’s something so comforting about the tender chicken, the soft tortillas, the creamy green chile sauce, and all that melted cheese on top. My kids love helping layer everything, and my husband always takes leftovers for lunch the next day.

It’s simple, filling, and makes a big pan — perfect for busy weeknights or when you have company. If you’re looking for an easy Mexican-inspired casserole that tastes like it took hours but doesn’t, this is it. I promise you’ll love it!

Introduction

Hey friends! Let me tell you about one of those recipes that saved me on many busy weeknights — my Taco Tater Tot Casserole.

I first made this years ago when my kids were little and I was exhausted from work. I had ground beef, a bag of tater tots, and some taco seasoning. I threw everything together hoping for the best… and wow, it was a huge hit! My son even asked for seconds, which almost never happened back then.

Since that first messy attempt, I’ve made this casserole probably over 50 times. It’s become one of those “everybody happy” dinners in our house. The combination of spicy taco meat, sweet corn, creamy nacho cheese, and crispy golden tater tots on top is just perfect.

It’s super forgiving, cheap to make, and fills up hungry bellies fast. Even my picky eaters love it. If you’re looking for an easy, comforting dinner that feels like a hug in a pan, this is it. I promise you’ll add this to your regular rotation!

Introduction

Hey friends! Today I’m sharing something really close to my heart — my Grandma’s Country White Bread.

This is the bread I grew up eating. Every Sunday morning my grandma would bake a couple of loaves, and the whole house would smell like heaven. I remember standing on a little stool next to her, “helping” knead the dough with my tiny hands. Sometimes I’d add too much flour and the bread would come out heavy, but grandma would just smile and say, “Next time it’ll be better, sweetheart.”

I’ve been making this bread for over 15 years now, and it never fails to bring back those warm memories. There’s nothing quite like slicing into a fresh, warm loaf and spreading butter on it while it’s still steaming. My kids ask for it all the time, and even my husband (who isn’t a big bread person) loves it toasted with jam.

This recipe is simple, forgiving, and makes two beautiful loaves. Whether you’re a beginner or an experienced baker, I promise you can do this. If I can do it after my early disasters, you totally can too!

Kneading the dough

Recipe Card

Prep Time: 20 minutes
Rise Time: 1 hour 30 minutes
Bake Time: 30–35 minutes
Total Time: About 2 hours 30 minutes
Servings: 2 loaves (about 20–24 slices)
Difficulty: Easy
Cuisine: American
Course: Bread

This is my go-to bread when I want my house to smell like home.

Ingredients

  • 3 cups lukewarm water (not too hot!)
  • ¼ cup sugar
  • 1½ tablespoons active dry yeast
  • ⅓ cup vegetable oil (or canola)
  • 1 tablespoon salt
  • 6–7 cups unbleached all-purpose flour (you may need up to 8 cups if using regular flour)
  • Optional: 1 tablespoon vital wheat gluten (if using whole white wheat flour)

Instructions

  1. In a large mixing bowl, dissolve the yeast in the lukewarm water and sugar. Give it a gentle stir and let it sit for about 10 minutes until it gets nice and foamy.
  2. Add the oil and salt, then start adding the flour one cup at a time.
  3. Now here’s the fun part — mix everything together. When it starts getting hard to stir, get your hands in there! Knead the dough for 6–10 minutes until it’s smooth, elastic, and just a tiny bit sticky.
  4. If the dough feels too wet, add a little more flour, one spoonful at a time. You want it to pull away from the sides of the bowl but still be soft.
  5. Cover the bowl with a clean dish towel or plastic wrap and let the dough rise in a warm spot until it doubles in size (about 1 hour or more).
  6. Punch the dough down gently, divide it into two equal parts, and shape each into a loaf.
  7. Place the loaves in greased bread pans. Cover again and let them rise for another 30–45 minutes.
  8. Preheat your oven to 350°F (175°C). Bake for 30–35 minutes until the tops are golden brown and the loaves sound hollow when tapped.
  9. Remove from the oven and let them cool on a wire rack for at least 20 minutes before slicing.

Slice with butter

  • Fresh homemade bread that beats store-bought any day
  • Only a few simple ingredients
  • Makes two big beautiful loaves
  • Perfect for beginners

  • Freezes beautifully

Equipment You’ll Need

  • Large mixing bowl
  • Measuring cups and spoons

My Best Cooking Tips & Kitchen Secrets

  • Lukewarm water is important — too hot kills the yeast, too cold and it won’t rise.
  • Don’t be afraid to add more flour while kneading. Every kitchen is different.
  • I often put the bowl in the oven with just the light on to help it rise faster.
  • For softer bread, use all-purpose flour. For heartier bread, use white whole wheat.

Fun Variations & Substitutions

  • Add honey instead of sugar for a touch of sweetness
  • Mix in some oats or seeds on top before baking
  • Make it garlic bread by adding minced garlic and herbs
  • Turn leftovers into French toast the next day

How to Store & Make Ahead

Store in a bread bag or airtight container on the counter for 3–4 days. For longer storage, slice and freeze in freezer bags for up to 3 months. It toasts beautifully straight from the freezer.

Frequently Asked Questions

Why is my bread dense?
You probably added too much flour or didn’t knead long enough. Next time stop when it’s still slightly sticky.

Can I use instant yeast?
Yes, it works great and you can skip the 10-minute wait.

How do I know when the bread is done?
It should be golden and sound hollow when you tap the bottom.

Can I make this in a bread machine?
Yes! Use the dough cycle then shape and bake in the oven.

Why do I need to let it rise twice?
The second rise gives it a lighter, fluffier texture.

Can I freeze the dough?
Yes, after the first rise. Thaw and do the second rise before baking.

My bread is too dry. What happened?
You may have over-baked it or used too much flour.

Here is how it works!

Benefits of a Soup Cleanse

Soups are one of the cleanest meals you will ever get to eat. They are a pure detoxifier and keep the body full of significant nutrients and compounds that do it good.

By detoxifying the organism you will boost the performance of your liver, gut, kidneys, lymphatic system, lungs, and finally, skin.

The soup cleanse also enables the body to acquire all the necessary spices, fatty acids and amino acids which alleviate digestion and stimulate the immunity.

Full of fiber, soups are excellent source of energy and can balance the weight, control the blood sugar and improve the mental sanity.

Vegetable soups are especially important because they possess complex carbohydrates, whereas fruits have more sugar that keeps the energy flowing.

Some of the qualities soup cleanses bring along are: reduced inflammation, increased energy levels, disease prevention, cell rejuvenation, weight loss, and clear skin.

How to do it right

A proper soup cleanse last 1-3 days. First phase starts with one day, and a month later increase the lasting time to three.

The amount you need to intake is from five to six soups per day. In case this is not enough, refill the bowl.

Make sure to prepare mostly vegetable soups that contain various types of healthy products. This will give your body the energy it needs to operate properly. Also, add healing spices and include nutrient-rich broths.

Don’t forget to hydrate at all times. Water removes toxins and extra water stuck in the body; this flush will help you feel more flexible, agile and upbeat. The amount of water you need is around ½ your weight in ounces of water each day.

Prepare soup a few days in advance- this will help you stay organized and ready at all times.
