BROWN SUGAR MEATLOAF
Ingredients :
½ cup brown sugar
½ cup ketchup
1½ pounds meatloaf mix (equal parts ground beef, ground veal and ground lamb, although all ground beef will work fine too)
2 eggs, beaten
¾ cup milk
½ cup chopped onion
¾ cup bread crumbs
how :
Preheat oven to 375.
Pour the brown sugar into a 9×5 loaf pan and press it into the bottom. Spread the ketchup on top of the sugar.
Mix all remaining ingredients together and press into the loaf pan on top of the ketchup.
Bake for one hour. Remove from oven and pour juices into a bowl. Discard juice and let meatloaf rest for 10 minutes.
Invert loaf onto a platter or cutting board, slice it up and enjoy!

Chicken & Dressing Casserole
what you will need :
cornbread (about 4 C. crumbled)
4 large chicken breast, cooked and cubed
1 10.5 oz. can cream of mushroom soup
1/2 tsp. poultry seasoning (optional)
4 eggs, boiled and chopped
1 small onion, chopped
1/2 tsp. black pepper
1 stalk celery, diced
2 C. chicken broth
2 T. melted butter
1/4 tsp. salt
how :
Combine all ingredients in a bowl and pour into a 9 x 13, lightly greased casserole dish. Bake at 350 degrees for 40-50 minutes or until set.
Gravy:
1/2 C. unsalted butter
1/2 C. all purpose flour
1 quart chicken stock
1/3 C. heavy cream
1/4 tsp. salt
1/2 tsp. black pepper
pinch of cayenne pepper
Melt butter in a saucepan over medium heat. Whisk in flour and cook for 2 minutes. Gradually whisk in chicken stock. Reduce heat to low and cook and stir until thick enough to coat the back of a spoon, 4-6 minutes. Stir in heavy cream, and season with salt, pepper, and cayenne pepper.
Serve the casserole with gravy over the top and a big side of mashed potatoes.

Vanilla Magic Custard Cake
Ingredients
½ cup unsalted butter-melted and slightly cooled
2 cups milk-lukewarm
4 eggs-separated
1¼ cups (150g) powdered sugar
1 Tablespoon water
1 cup (115g) flour
1 teaspoon vanilla extract
powdered sugar for dusting
Instructions
Preheat the oven to 325°F
Lightly grease 8×8 inch baking dish, set aside
Whip the egg whites until stiff peaks form, set aside.
Beat the egg yolks and powdered sugar until pale yellow.
Mix in melted butter and the tablespoon of water (for about 2 minutes) until evenly combined.
Mix in the flour until evenly incorporated.
Slowly beat in the milk and vanilla extract until well combined.
Fold in the egg whites (1/3 at a time, then repeat until all of the egg whites are folded in).
Pour the batter into the pan and bake for 40-60 minutes (until the cake is barely jiggly in the center). Baking time might vary depending on your oven or pan you use, but start checking after 40 minutes. If the top browns too quick before the minimum of 40 minutes, you can cover the cake with aluminum foil.
Cool the cake completely before dusting with powdered sugar. Even cooled, it will be slightly jiggly because it has custard layer in the center.

Scalloped Potatoes Recipe
Ingredients :
4 pounds round white potatoes or red-skin potatoes, peeled and rinsed
4 tablespoons butter
1/3 cup All-Purpose Flour
3 1/2 cups whole milk
1 teaspoon onion powder, optional
1 teaspoon salt
Directions :
Preheat the oven to 350°F. Lightly grease a 9″ x 13″ pan or 2-quart casserole. To prepare the potatoes: Slice the potatoes 1/8″ to 1/4″ thick. Place the sliced potatoes in a large saucepan with cold water to cover; add 1 teaspoon salt. Bring to a boil; as soon as the potatoes come to a full boil, set your timer for 1 minute. After 1 minute, remove them from the heat. Drain the potatoes thoroughly, and layer in the prepared pan. Salt the layers as you go, if desired; the salt in the white sauce is the bare minimum required for flavor. If you’re someone who likes a bit more salt on their food, then do sprinkle some onto the potatoes as you go.
To make the sauce: Melt the butter in a medium-sized saucepan. Whisk in the flour, stirring until smooth. Immediately start stirring in the milk, adding gradually and stirring constantly to prevent lumps. When all the liquid is added, stir in the onion powder and salt. Cook over medium heat, stirring frequently, until the sauce thickens just a bit; this won’t be very noticeable, more like the difference in consistency between skim milk and heavy cream. Remove from the heat. Pour the sauce over the potatoes, pressing them down so they’re nearly covered; a few slices sticking up are OK, they’ll lend the dish character.
Bake the potatoes for 1 hour, or until they’re bubbly and golden brown on top. A sharp knife inserted into the center of the potatoes should find little resistance. Remove the potatoes from the oven, and serve hot or warm.

Italian Rigatoni Bake
Ingredients :
1 lb. ground beef
1 1b. ground Italian “mild” sausage
1 large onion, chopped
1 28oz. can petite diced tomatoes with juice
1 8 oz. can tomato sauce
1 T. minced garlic
1 16 oz. box rigatoni pasta
1 15oz. tub whole milk ricotta cheese
1 egg
12 oz. shredded mozzarella cheese
1/4 C. grated parmesan cheese
2 T. olive oil
3 tsp. Italian seasoning
pinch red pepper flakes
pinch of salt and pepper
dried basil
Directions :
In a large skillet, over med. high heat add the olive oil and onions and sauté till tender (about 5 minutes), add in the ground beef and sausage and cook until browned and cooked through. Drain the grease, leaving a little in the pan for moisture. Add in the garlic, canned tomatoes with juice and the tomato sauce. Stir well, add in 2 tsp. Italian seasoning, pinch of salt and pepper and red pepper flakes. Once combined, remove 1 C. to a bowl and set aside to cool. Cover remaining sauce and simmer on low for 20 minutes. While the meat sauce is simmering, bring a large pot of water to a boil and cook the pasta with 1 T. of salt till tender. In another bowl, combine ricotta cheese, 1 beaten egg, 1 C. of mozzarella cheese, 1 tsp. italian seasoning and the parmesan cheese. When pasta is done, drain and add to the ricotta mixture stir to combine and then add the cooled sauce to the pasta and combine. In a 10×13 deep sided dish, lightly grease with cooking spray. Layer 1/2 of the noodle mixture in the bottom, top with 1/2 of the meat mixture then 1/2 of the cheese. Repeat for the final layer and sprinkle with dried basil on top of the cheese. Bake at 350 degrees for 45 minutes or until cheese is browning and casserole is bubbly.

German Cucumber Salad
Ingredients:
1/2 cup sour cream or plain yogurt
1 cucumber
1 medium to large tomato
2 slices onion (slice like you would for onion rings)
2-4 tsp lemon juice
1/2 – 3/4 tsp dill
Pinch of salt
Instructions:
1. Peel and slice your cucumber, slice your tomato, and slice your onion. I like to slice, then quarter the onion because its easier to eat.
2. In a bowl, combine dill and salt.
3. Add sour cream or yogurt and lemon juice to taste. Mix well.
4. Add onion, cucumber, and tomato to the mixture and stir until the veggies are coated with the dressing.

Coconut Cream Pie
Ingredients
1 9-inch baked pie crust
2/3 cup sugar
1/3 cup cornstarch
2 tablespoons all-purpose flour
1/4 teaspoon salt
3 eggs
3 cups milk
1 tablespoon butter
2 teaspoons vanilla extract
1 1/4 cups sweetened flaked coconut
Directions
In medium saucepan, stir together sugar, cornstarch, flour and salt; stir in eggs until mixture is well blended.
Gradually stir in milk.
Cook over medium heat, stirring constantly with whisk, until mixture boils; boil and stir 1 minute.
Remove from heat; stir in butter and vanilla.
Stir in coconut until blended; pour into baked pie crust.
Press plastic wrap directly onto surface; refrigerate 6 to 8 hours or until set.
Just before serving, spread with whipped cream; sprinkle with toasted coconut.
Cover; refrigerate leftover pie.
8 servings.
Variation: You can also toast the coconut before adding it to the pie.
Preheat oven to 350 degrees.
Spread evenly on cookie sheet, stir once or twice while baking for 5 to 10 minutes, until light golden brown.

Walking Taco Casserole
Ingredients :
1 lb Ground chicken, beef or turkey
1 small onion sliced
1/2 Can of Rotel (diced tomatoes with green chillies)
1 Packet of Taco seasoning
1 Bag of Frito Corn Chips
1 Can Black Beans, drained and rinsed
1 Can Enchilada Sauce (10 oz)
2 oz. Cream Cheese
2 C. Shredded Cheese
Directions :
In a skillet brown the meat and onion. Add the Rotel and taco seasoning. Simmer until any liquid is evaporated. Add black beans and cream cheese. Turn off the heat and stir in the cream cheese until melted and combined. Stir in the enchilada sauce.
Spray a 9×13 pan with cooking spray. Dump 1/2 of the bag of Fritos into the bottom of the pan. Top with 1/2 of the meat mixture and 1/2 of the shredded cheese. Repeat the layer Chips, meat, cheese.
Bake at 325 degrees for 20 minutes or until cheese is melted and casserole is heated through.

Old Time Oven Peach Cobbler
Ingredients :
1 large can of sliced peaches, drained
1 cup Bisquick mix
1 cup of milk
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup butter, melted
1 cup of sugar
vanilla Ice Cream, optional
Directions
Preheat oven to 375
In an 8 x 8 baking dish, stir Bisquick mix, milk, nutmeg and cinnamon together until thoroughly mixed. Stir in melted butter.
In a medium mixing bowl, stir sugar and peaches. Spoon peaches over the cobbler crust.
Bake for 45 minutes to one hour or until crust is a golden brown. Top with vanilla ice cream

5-Layer Mexican Dip or Nachos Supreme Recipe
Ingredients :
1 (15 ounce) cans spicy refried beans
1 cup sour cream
2/3 cup mayonnaise
1 (1 ounce) package taco seasoning mix
2 (4 ounce) cans diced green chilies
4 somewhat firm avocados, diced small
2 tablespoons fresh lemon or 2 tablespoons lime juice
1 teaspoon salt
1/4 teaspoon garlic powder
2 cups cheddar cheese, shredded
2 cups green onions, chopped
2 cups tomatoes, chopped
6 ounces chopped black olives
3 tablespoons chopped fresh cilantro
tortilla chips, warmed ( such as Scoops)
Directions :
In a 13 x 9-inch glass serving dish, spread the refried beans. Mix together the sour cream, mayonnaise, and taco seasoning mix. Spread this on top of the beans. Put on a layer of the chopped green chiles (both cans). Note: You may substitute 8 ounces of chunky salsa for the chopped green chiles. Mix together the diced avocados, lemon juice, salt and garlic powder. Spread this on top of the green chiles. Mix together the shredded cheese, green onions, chopped tomatoes and chopped olives. Sprinkle this on top. Garnish with chopped fresh cilantro. May be served right away, or cover and chill for up to 24 hours. -OR-, to serve hot:, bake at 350 degrees F until hot and bubbly, about 15 minutes. Serve with warm tortilla chips.
TO MAKE NACHOS SUPREME:.
Layer dip with tortilla chips and sliced carne asada steak, pollo asada, seasoned ground beef, or shredded chicken; top with extra shredded cheese and diced green chiles. Bake or microwave briefly until heated through and the cheese has melted.

Chicken Cheese Enchiladas Recipe
Ingredients :
2 cups sour cream
1 can condensed cream of chicken soup, undiluted
1 (4 oz) can chopped green chilies
1 (2 oz) can sliced ripe olives, drained
4 cups cooked chicken, cubed
3 cups shredded monterey jack cheese, divided
3 cups shredded cheddar cheese, divided
12 flour tortillas (6 inches)
4 green onions, thinly sliced
Directions of Chicken Cheese Enchiladas Recipe:
In a large bowl, combine the sour cream, soup, chilies, and olives. Set aside 1-1/2 cups for topping. Add the chicken, 2 cups Monterey Jack cheese and 2 cups Cheddar cheese to remaining soup mixture, mix. Spoon about 1/2 cup chicken mixture down the center of each tortilla; roll up tightly. Place seam side down in a greased 13-x9x2-inch baking dish. Top with reserved soup mixture. Bake, uncovered, at 350 degrees for 40 minutes. Sprinkle with remaining cheeses; top with onions (I put the onions on first since I wanted more onion flavor in the enchiladas and then cheese on top, the onion mixed in with the cheese great as you can see in the picture). Bake 10-15 minutes longer or until cheese is melted.
